Pizza with onions, goat's cheese and
rosemary Recipe
(makes: 2 x 30 cm pizzas)

Ingredients:

90 g/ 3/4 cup

olive oil
large red onions, thinly sliced
A pinch of sugar
Salt and black pepper
Basic Pizza Dough
firm goat's cheese, chopped
walnuts, chopped
very finely chopped rosemary |

Method:

Heat the butter
and oil in a large frying pan. Add the onions
and sugar, season with salt and pepper and stir
for several minutes.

Cover and cook over a gentle heat
for about 30 minutes. Uncover and continue to
cook until the onions start to take on a little
color. Taste and adjust the seasoning.

Preheat the oven to 240 oC.
Make the pizza dough and leave it to rise for 15
minutes.

Roll out one ball of dough into a
circle about 30 cm in diameter. Spread half the
onions over the pizza base and sprinkle with
half of the cheese, walnuts and rosemary. Bake
for about 15 minutes. Repeat with the remaining
dough and filling for a second pizza.
