Fresh Vegetable Stir-fry Recipe
(serves 4 to 6)

 

Ingredients:

2 tbsp/ 30 ml
1 tbsp/ 15 ml

olive oil
yellow onion, sliced
baby carrots, pared and sliced on the bias
red pepper, cubed
white Holland pepper, cubed
sweet banana pepper, cubed
zucchini, halved lengthwise & sliced on the bias
yellow summer squash, halved lengthwise & sliced on the bias
pine nuts
chopped fresh ginger
garlic cloves, smashed and chopped
salt and pepper

 

Method:

  1. Heat olive oil in frying pan over medium-high heat. add onion and carrot; cook 2 minutes. Cover and continue cooking 2 minutes.

  2. Add remaining ingredients and mix well. Season with salt and pepper. Cook, uncovered, 5 to 6 minutes over high heat.

  3. If desired, add lemon juice before serving.
