medium red cabbage
diced salt pork
slice bacon, diced
large onion, in narrow wedges
garlic cloves, peeled & halved
chopped green chili pepper
dry red wine
salt and pepper
Method:
Preheat oven to
325 oF (160 oC).
Core cabbage. Cut
in quarters and slice thinly. Place cabbage in
bowl with cold water for 30 minutes. Drain and
set aside.
Place salt pork in
deep ovenproof saute pan. Cook 3 minutes over
medium heat. Discard salt pork and add bacon to
hot pan. Cook 3 minutes.
Add cabbage,
onion, garlic and chili pepper. Season with salt
and pepper; cook 12 minutes over low heat.
Pour in wine and
bring to boil over high heat. Cover pan and
braise 2 hours in oven.
