Artichokes with Vinaigrette Recipe
(serves 4)

 

Ingredients:

1 1/2 cups/ 375 ml

 

large artichokes, washed
slices lemon
vinaigrette

Method:

  1. Cut off artichoke stems and snap off leaves near bottom end. Cover base with lemon slice and secure with kitchen string.

  2. Place artichokes in large pot containing at least 8 cups (2 L) salted boiling water. Partly cover and cook 40 to 50 minutes over medium heat, depending on size.

  3. When cooked (center leaves should pull free easily), drain well and squeeze out excess water. Separate leaves on platter and remove and discard fuzzy choke. Place artichoke bottoms with leaves.

  4. Serve with vinaigrette for dipping.
