Thai Green Chicken Curry Recipe

Ingredients:

3 tbsp/ 45 ml
2 lb/ 1 kg
4 tbsp/ 60 g

2 1/2 cups/ 1 pints/ 600 ml
2 tbsp/ 30 ml

vegetable oil
onions, chopped
Thai green curry paste
boneless chicken thigh or breast fillets, chopped
fresh basil leaves
kaffir lime leaves, shredded
coconut milk
Thai fish sauce (nam pla)
extra fresh basil leaves

Method:

Heat oil in a
saucepan over a high heat, add onions and cook
for 3 minutes or until golden. Stir in curry
paste and cook for 2 minutes or until fragrant.

Add chicken,
basil, lime leaves, coconut milk, and fish
sauce, and bring to the boil. Reduce heat and
simmer for 12-15 minutes or until chicken is
tender and sauce is thick. Serve garnished with
extra basil.
