Thai Beef Salad Recipe

Ingredients:

rump or topside steak
mixed lettuce leaves
cherry tomatoes, halved
cucumbers, peeled and chopped
red onions, sliced
fresh mint leaves
lime & coriander (cilantro) dressing
fresh lemongrass, chopped
fresh coriander (cilantro) leaves
brown sugar
lime juice
light soy sauce
sweet chili sauce
Thai fish sauce (nam pla)

Method:

Heat a frying pan
or char grill pan over a high heat until hot,
add beef, and cook for 1-2 minutes each side, or
until cooked to your liking. Set aside to cool.

Arrange lettuce,
tomatoes, cucumbers, onions, mint attractively
on a serving platter.

To make dressing,
place lemongrass or lime rind, coriander
(cilantro), sugar, lime juice, and soy, chili
and fish sauces in a bowl. Mix to combine.

Slice beef thinly
and arrange on salad, then drizzle with dressing
and serve.
