Lemongrass Beef Packages Recipe

Ingredients:

Chinese (mung bean) vermicelli
lean ground beef
bean sprouts
lemongrass, finely chopped
lemon juice
fish sauce
green onions (scallions), thinly sliced
canned water chestnuts, drained & finely chopped
rice paper wrapper
fresh mint leaves
sweet chili sauce, for dipping

Method:
-
Soak vermicelli
with boiling water in a bowl, and allow to stand
for 10 minutes or until soft. Drain well.

Put the ground
beef and 3 tbsp of water in a frying pan and
cook over a high heat for about 10 minutes or
until the beef is tender and cooked. Drain off
any excess liquid.

Transfer the beef
to a bowl, add the bean sprouts, lemongrass,
lemon juice, fish sauce, green onions
(scallions), and water chestnuts.

Soak the rice
paper wrappers one at a time in a bowl of warm
water until soft.

Place a mint leaf
at the end of a wrapper, place 2 tbsp/ 50 g of
the beef mixture on the wrapper, fold in the
ends, and roll up to enclose.

Serve with sweet
chili sauce.
