Watercress Soup with Potato Recipe
(SERVES 4 TO 6)

 

Ingredients:

5 cups/ 1.2 L
1/2 cup/ 125 mL

 

butter
onion, sliced
garlic clove, smashed and chopped
bunches fresh watercress, washed and chopped
thyme
oregano
chopped fresh parsley
large potatoes, peeled and sliced
light chicken stock, heated
sour cream
salt and pepper

Method:

  1. Heat butter in saucepan over medium heat. Add onion and garlic; cook 4 minutes over low heat.

  2. Add watercress and seasonings. Mix, cover and cook 8 minutes over low heat. Stir occasionally.

  3. Add potatoes and chicken stock. Season and bring to boil. Cook 30 minutes, partly covered, over medium heat.

  4. Force soup through sieve into bowl.

  5. If desired, sprinkle with paprika before serving.
