Split Yellow Pea Soup Recipe
(SERVES 4 TO 6)

Ingredients:

1 1/4 cups/ 300 mL
6 cups/ 1.5 L

1/2 tsp/ 2 mL
1 tsp/ 5 mL
1 cup/ 250 mL
2 tbsp/ 30 mL
bacon fat
medium onion, chopped
celery stalks, diced
large carrot, pared and diced
dry split yellow peas, soaked 8 hours in cold water
chicken stock, heated
bay leaf
basil
chopped fresh parsley
cooked ham, in julienne
soft butter
salt and pepper
few drops Worcestershire sauce
 

Method:

  1. Heat bacon fat in large saucepan over medium heat. Add onion and cook 3 minutes.

  2. Stir in celery and carrot; cover and cook 4 minutes, stirring once or twice.

  3. Stir in drained soaked peas. Add chicken stock and all seasonings including bay leaf. Add ham; partly cover and cook soup 45 minutes over medium heat. Stir several times.

  4. Add Worcestershire sauce and butter; mix well and serve hot.
