Split Pea Soup Recipe
(SERVES 4 TO 6)

 

Ingredients:

6 cups/ 1.5 L

1/4 tsp/ 1 mL

1 tsp/ 5 mL
1/4 tsp/ 1 mL

 

butter
onion, finely chopped
celery stalk, diced
carrots, pared and diced
meaty ham bone
split peas, rinsed in cold water
vegetable stock
bay leaf
thyme
sprigs fresh parsley
mustard seeds
ground cloves
salt & pepper

Method:

  1. melt butter in large saucepan over medium heat. Add onion, celery and carrots. Cover and cook 7 minutes over low heat.

  2. Add remaining ingredients; season with salt and pepper. Bring to boil. Cook 3 hours, partly covered, over low heat. Stir occasionally.

  3. Remove ham bone.

  4. Serve with croutons.
