She-Crab Soup A La Mode Recipe
(SERVES 4 TO 6)

Ingredients:

2 tbsp/ 30 mL
1
1
1/4 tbsp/ 1 mL
2 tbsp/ 30 mL
2 cups/ 500 mL
1 1/2 cups/ 375 mL
1/2 cup/ 125 mL
2 tbsp/ 30 mL

 

butter
onion, grated
celery stalk, grated
mace
flour
milk
crab meat, fresh or frozen, flaked
light cream
sherry
salt and pepper

Method:

  1. Heat butter in saucepan over medium heat. Add onion, celery and mace. Mix and cook 6 minutes over low heat.

  2. Sprinkle in flour and mix well. Cook 2 minutes. Season with salt and pepper.

  3. Incorporate milk using whisk. Season again, then bring to boil. Cook 8 minutes over low heat, stirring occasionally.

  4. Add crab meat and simmer 5 minutes.

  5. Incorporate cream and simmer 2 minutes.

  6. Add sherry, mix and simmer 1 minute. Serve.
