She-Crab Soup Recipe
(SERVES 4 TO 6)

 

Ingredients:

2 cups/ 500 mL
1/4 tsp / 1 mL
2 cups/ 500 mL
3 tbsp/ 45 mL
2 cups/ 500 mL
1/2 cup/ 125 mL
2 tbsp/ 30 mL

 

milk
mace
crab meat, fresh or frozen, flaked
butter
light cream
crushed soda crackers
sherry
pinch cayenne pepper
salt and pepper
chopped fresh parsley

Method:

  1. Pour milk into top half of double boiler. Add mace and cook 8 minutes over low heat.

  2. Add crab meat, butter and cream. Season with salt, pepper and cayenne pepper. Stir and cook 15 minutes over low heat. Stir occasionally during cooking.

  3. Remove from heat. Add crushed crackers and let stand several minutes to thicken soup.

  4. Stir in sherry just before serving.

  5. Sprinkle with parsley and serve.
