Savannah's Fresh Okra Soup Recipe
(SERVES 4 TO 6)

 

Ingredients:

6 cups/ 1.5L
2 cups/ 500 mL

 

olive oil
celery stalk, diced
medium onion, chopped
tomatoes, peeled and diced
thyme
basil
celery seeds
meaty ham bone
vegetable or light chicken stock, heated
fresh okra, cleaned and cut in two pinch sugar
few drops Worcestershire sauce
salt and pepper

Method:

  1. Heat oil in saucepan. Add celery and onion; cook 5 minutes over medium heat.

  2. Add tomatoes and all seasonings. Mix and cook 2 minutes.

  3. Add ham bone and stock. Bring to boil.

  4. Stir in okra and continue cooking 45 minutes over medium heat. Stir occasionally.

  5. Serve over steamed rice.
