Onion Soup Au Gratin Recipe
(SERVES 4 TO 6)

 

Ingredients:

2 tbsp/ 30 mL

1 cup/ 250 mL
5 cups/ 1.2 L

1 cup/ 250 mL
 

 

butter
Spanish onions, thinly sliced
dry white wine
beef stock, heated
beef stock, heated
grated Gruyere or Emmentaler cheese
cayenne pepper
salt and pepper
large slices of toasted
French bread

Method:

  1. Heat butter in large saucepan over medium heat. Add onions and brown 35 minutes over medium-low heat. Stir several times during cooking, and do not allow onions to burn.

  2. Pour in wine and cook 6 minutes over high heat.

  3. Add beef stock, bouquet garni and cayenne pepper. Season with salt and pepper. Stir and cook soup 30 minutes over medium heat. Do not cover.

  4. Place 2 tbsp (30 mL) of grated cheese in bottom of each ovenproof soup bowl. Ladle in soup and add toasted bread. Top with remaining cheese.

  5. Set bowls on ovenproof platter and place in middle of preheated oven set at broil. Brown 8 minutes. Serve.
