Navy Bean Soup Recipe
(SERVES 4 TO 6)

 

Ingredients:

1 cup/ 250 mL
2 oz/ 60 g

dried navy beans
salt pork, diced medium
onions, diced
stalk celery, diced
oregano
bay leaf
large carrot, pared and diced large
salt and pepper

Method:

  1. Place beans in large bowl and cover with hot water. Soak 2 hours.

  2. Place salt pork in large saucepan over medium heat. Cook 3 minutes. Add onions and celery; cook 4 minutes over low heat.

  3. Drain beans and add to onions in saucepan. Add seasonings. Pour in enough cold water to cover beans by 3 in (8 cm). Bring to boil. Cook 1 1/2 hours, partly covered, over medium heat. Stir occasionally.

  4. Add diced carrot and correct seasoning. Continue cooking 1 hour, stirring occasionally.

1 SERVING:     168 CALORIES     16g CARBOHYDRATE     5g PROTEIN     9g FAT     4.8g FIBER
