Hot and Sour Soup Recipe
(SERVES 4 )

Ingredients:

250 g
1 litre
75 g
1
1 tsp
1-2
1 tsp
2 tbsp

To garnish:

chicken, pork or green prawns, diced
chicken stock or water
can szechwan preserved vegetables
egg white, lightly beaten
corn flour, dissolved in 3 tbsp water
red chilies, deseeded and finely chopped
black pepper
sesame oil

Chopped spring onions or
crisply fried shallots

Method:

  1. In a large saucepan, bring the first three ingredients to the boil; simmer for 10 minutes if using chicken or pork, 5minutes if using prawns.

  2. Add the remaining ingredients and stir gently over a low heat.

  3. After 5 minutes or so, when the soup has thickened slightly, remove it from the heat, sprinkle with the garnishes and serve in warm bowls.

PREPARATION TIME: 10 minutes     COOKING TIME: 15 minutes
