Creamy Summer Squash Soup  Recipe
(SERVES 4 TO 6)

Ingredients:

4 tbsp/ 60 mL

4 tbsp/ 60 mL
4 1/2 cups/ 1.1 L
1/2 tsp/ 2 mL
1 tsp/ 5 mL
1/2 tsp/ 2 mL
1/4 tsp/ 1 mL

 
butter
onion, sliced
yellow summer squash, sliced
flour
light chicken stock, heated
thyme
basil
celery seeds
paprika
salt and pepper
 

Method:

  1. Melt butter in saucepan over medium heat. Add onion and cook 3 minutes over low heat.

  2. Add summer squash and season well. Cover and cook 6 minutes over low heat.

  3. Sprinkle in flour and mix well. Cook 1 minute.

  4. Stir in chicken stock and seasonings. Correct seasoning and bring to boil. Cook 20 minutes over low heat.

  5. Force soup through sieve into bowl. Serve.
