Cream of Green Onion Soup Recipe
(SERVES 4 TO 6)

 

Ingredients:

3 tbsp/ 45 mL

4 1/2 cups/ 1.1 L

1/2 tsp/ 2 mL
1 tsp/ 5 mL
1 tsp/ 5 mL
1 tbsp/ 15 mL

 

butter
green onions, chopped
flour
chicken stock, heated
large potatoes, peeled and sliced
thyme
basil
tarragon
chopped fresh parsley
salt and pepper

Method:

  1. Melt butter in saucepan over medium heat. Add green onions and cook 6 minutes over low heat.

  2. Mix in flour and cook 1 minutes.

  3. Whisk in chicken stock. Add potatoes and seasonings. Cook 30 minutes over medium-low heat, stirring occasionally.

  4. Remove from heat and force soup through coarse sieve into bowl. Sprinkle with parsley and serve.
