Carolina Beef and Beans Recipe
(SERVES 4 TO 6)

 

Ingredients:

3/4 cup/ 175 mL
4 cups/ 1 L
1 tsp/ 5 mL
3/4 lb/ 375 g

1/2 tsp/ 2 mL
1 tbsp/ 15 mL
1

 

dried black beans
cold water
olive oil
beef short ribs, cut up
large onion, diced
stalk celery, diced
garlic clove, peeled
bay leaf
basil
chopped fresh parsley
large carrot, pared and diced
salt and pepper

Method:

  1. Place beans in saucepan and pour in water. Bring to boil over medium heat. Boil 7 minutes. Remove saucepan from heat and let stand 1 hour.

  2. Heat oil in large saucepan over medium heat. Add short ribs and sear 4 minutes.

  3. Add onion and celery; mix well and continue cooking 4 minutes.

  4. Add garlic, seasonings and carrot. Drain beans and add to saucepan. Correct seasoning. Add 5 cups (1.2 L) cold water, stir and bring to boil. Partly cover and cook 1 1/2 hours over medium heat. Stir occasionally.
