Black Bean Soup Recipe
(SERVES 6 TO 8)
Ingredients: |

dried black bean
bacon, diced
onion, diced
meaty ham bone
light beef stock, heated
bouquet garni
garlic cloves, smashed and chopped
salt and pepper |

Method:

Soak black beans
in cold water for 12 hour or overnight. Drain
and set aside.

Place bacon in large saucepan
and cook over medium heat for 3 minutes.

Add onion, cover and continue
cooking for 8 minutes. Stir occasionally during
cooking process.

Add beans and remaining
ingredients. Mix well and bring to boil. Partly
covered, cook over medium heat for 3 hours,
stirring occasionally.
Notes : A bouquet garni
consisting
of :thyme, basil, parsley and 2 bay leaves. |
