Prosciutto and Cantaloupe Canapés Recipe
(serves 8 to 10)

Ingredients:

Mild Garlic Butter:
5
1/2 lb/ 250 g

 

Canapes:
1/2
6 oz/ 200 g

 


garlic cloves, unpeeled
soft butter
few drops Tabasco sauce
few drops lemon juice


cantaloupe
thinly sliced prosciutto
slice of baguette, toasted
lemon juice
freshly ground pepper

 

Method:

  1. Blanch unpeeled garlic cloves in boiling water for 6 minutes. Drain and peel. Puree cloves.

  2. Place pureed garlic in bowl with butter, Tabasco and lemon juice. Mix well.

  3. Cut half cantaloupe into quarters. Re-cut each quarter into 1-in (2.5 cm) wide pieces. Set aside.

  4. Spread garlic butter over toasted baguette slices. Top with prosciutto and piece of cantaloupe. Sprinkle canapes with few drops of lemon juice. Season with freshly ground pepper.
