Gruyere Mushroom Broil Recipe
(serves 4)

Ingredients:

2 tbsp/ 30 ml
3/4 lb/ 375 g
1/2 lb/ 250 g
1
1/4 cup/ 50 ml
1/2 tsp/ 2 ml
1 cup/ 250 ml
1 cup/ 250 ml
1 cup/ 250 ml

 

Italian-type buns
butter
fresh mushrooms, cleaned & sliced
fresh oyster mushrooms, cleaned & sliced
shallot, chopped
sherry
basil
light white sauce, heated
light cream
grated Gruyere cheese
pinch nutmeg
paprika
salt and pepper

Method:

  1. Cut buns in half lengthwise. Hollow insides of buns by scooping out half of the bread. Toast bread shells in oven, then set aside.

  2. Melt butter in large frying pan over medium-high heat. Add both types of mushrooms; season with salt and pepper. Cook 6 minutes over high heat.

  3. Add shallot, mix and continue cooking 3 minutes over high heat.

  4. Stir in sherry, seasonings, white sauce and cream. Cook 5 minutes over low heat.

  5. Preheat oven at 400 oF (200 oC).

  6. Arrange toasted bun shells on cookie sheet. Spoon in mushroom mixture and top with cheese. Brown 3 minutes in oven. Serve.
