Cold Saffron Sauce Recipe

Ingredients:

large egg yolk
A pinch of sea salt
powdered saffron
ground cumin
ground coriander
sunflower oil
white wine vinegar
lemon juice
natural yoghurt

Method:

Beat the egg yolk
in a bowl, then mix in the salt and spices.

Pour in the oil
drop by drop as if making mayonnaise, beating
with a wooden spoon until each addition has been
amalgamated. After half the oil has been beaten
in, the rest can be added a little more quickly.

When all the oil
is amalgamated, stir in the vinegar and lemon
juice, then fold in the yoghurt. Serve with
grilled salmon steaks, trout, or poached white
fish.
