Bread Sauce Recipe
(serves 5)
Bread
sauce is a smooth, creamy and subtly spiced, it is one of the
easiest sauces to make. It is traditionally served in a sauce boat
with roast chicken, turkey and game birds. |
Ingredients:

small onion
milk
bay leaf
blade mace, optional
A pinch of salt
peppercorns
fresh breadcrumbs
butter
cream, optional

Method:

Stick the cloves
into the surface of the onion. Pour the milk
into a small saucepan and add the onion., herbs
and spices. Bring to the boil slowly, remove
from the heat, then cover and leave to infuse
for 15 minutes.

Strain the milk
and return it to the saucepan. Add the
breadcrumbs and butter and cook over a
gentle heat for about 15 minutes, or until the
breadcrumbs absorb the milk and the sauce is
thick and creamy.
