Aioli Recipe
(makes 300 ml)
Aioli
is a garlic-flavored mayonnaise that is traditionally served with
Mediterranean fish soups. But it also goes very well with other
foods such as eggs, fish, salads and vegetables. |
Ingredients:

300 ml
1 tsp

egg yolks
large cloves garlic, to taste
salt
olive oil, or olive & vegetable oil, mixed
lemon juice

Method:

Put the egg yolks
in a bowl. Crush the garlic with a pinch of
salt, add it to the eggs and beat or whisk well.

Start adding the
oil, beating all the time. When half of the oil
has been incorporated, add the lemon juice, then
the remaining oil, whisking all the time until
the aioli is thick and smooth. Aioli should be
stored in the same way as a mayonnaise.
