Purple Lettuce Salad Recipe
(serves 4)

 

Ingredients:

1/2 cup/ 125 ml

1 tbsp/ 15 ml

3 tbsp/ 45 ml
1/2 cup/ 125 ml
2 tbsp/ 30 ml
1 1/2 cups/ 375 ml

 

small radicchio lettuce, washed and well dried
Boston lettuce, washed and well dried
endive, washed and well dried
stuffed green olives (optional)
hard-boiled eggs, sliced
Dijon mustard
blanched garlic clove, smashed and chopped
wine vinegar
olive oil
heavy cream, whipped
croutons
salt and pepper

 

Method:

  1. Arrange lettuces and endive in large salad bowl, tearing leaves into smaller pieces if necessary. Add olives and eggs; set aside.

  2. Place mustard, garlic and vinegar in small bowl; season and mix together using whisk.

  3. Incorporate oil in thin stream while whisking constantly. Add whipped cream and mix well. Correct seasoning.

  4. Pour dressing over salad and toss until evenly coated. Add croutons, mix once more and serve.
