Mayonnaise Recipe
(serves 4 to 6)

Ingredients:

1 tsp
1 1/4 cups |
egg yolks
Dijon mustard
olive oil
juice of 1 lemon
salt and pepper

Method:

Place egg yolks in
bowl. Add mustard and mix well. Season with salt
and pepper.

Add oil, drop by
drop, mixing constantly with whisk. When
mayonnaise begins to thicken, add oil in steady
stream, whisking constantly.

Add lemon juice
only after mayonnaise is very thick
Notes: To keep
mayonnaise for 2 days in refrigerator, add 1 tbsp
(15 ml) hot water. Whisk well.
