Avocado and Apple Salad Recipe
(serves 4)

 

Ingredients:

1 tsp/ 5 ml
2 tbsp/ 30 ml
4 tbsp/ 60 ml
1 tbsp/ 15 ml
1/4 cup/ 50 ml


 

 

ripe avocados, halved, pitted, peeled and sliced
apples, cored and sliced with skin
Dijon mustard
lemon juice
olive oil
chopped fresh parsley
slivered toasted almonds
salt and pepper

 

Method:

  1. Place sliced avocados and apples in bowl; set aside.

  2. Place mustard, lemon juice and oil in small bowl; season well. Using whisk, mix until thick.

  3. Pour dressing over avocados and apples; sprinkle with parsley. Add almonds, season and toss gently. Serve.
