Fresh Tomato Sauce Recipe
(serves 6 to 8)

 

Ingredients:

1/2 tsp/ 2 ml
1 tbsp/ 15 ml
1 tbsp/ 15 ml
1

 

olive oil
large onion, chopped
carrot, pared and diced
celery stalk, diced
garlic cloves, smashed & chopped
large ripe tomatoes, peeled & chopped
tomato paste
chopped fresh basil
thyme
chopped fresh parsley
oregano
bay leaf
salt and pepper

Method:

  1. Heat oil in saute pan over medium heat. Add onion, carrot and celery. Cook 8 minutes over low heat.

  2. Mix in garlic and continue cooking 3 minutes.

  3. Add remaining ingredients and bring to boil. Cook 70 minutes, partly covered, over low heat. Stir 3 to 4 times during cooking.

  4. Serve over hot pasta.
