Egg Fried Rice with Ham Recipe
(serves 4 )

 

Ingredients:

3 cups/ 750 ml
1 tbsp/ 15 ml
 

 

butter
egg, beaten
olive oil
stalk Chinese cabbage (bok choy), sliced
garlic clove, smashed & chopped
yellow pepper, sliced
slice Virginia ham or prosciutto, cut in julienne
cooked rice
chopped fresh parsley
salt and pepper

Method:

  1. Heat butter in frying pan over medium heat. Add beaten eggs and cook 15 seconds.

  2. Flip omelet over and continue cooking 30 seconds. Remove pan from heat and let omelet cool.

  3. Slice cold omelet into julienne. Set aside.

  4. Heat oil in large frying pan. Add cabbage, garlic and yellow pepper. Cook 4 minutes over medium heat.

  5. Add ham, stir and continue cooking 4 minutes.

  6. Add rice and parsley. Season with salt and pepper; cook 8 minutes or just until rice starts to brown.

  7. Add sliced omelet, mix well and cook 3 minutes. Serve.
