Agnolotti with Anchovy Pesto Recipe
(serves 4)

 

Ingredients:

3/4 cup/ 175 ml
6 to 8
1 cup/ 250 ml
1/4 cup/ 50 ml
1/2 cup/ 125 ml

garlic cloves, peeled
pine nuts
anchovy filets, drained
fresh basil
olive oil
grated Parmesan cheese
portions cooked agnolotti pasta, hot
freshly ground pepper

Method:

  1. Place garlic, pine nuts, anchovies and basil in food processor. Blend for 30 seconds.

  2. Add oil and cheese; blend to incorporate.

  3. Pour sauce over hot pasta and season with pepper. Mix and serve.
