Chicken in a brick Recipe

Ingredients:

fresh roasting chicken
lemon
salt and black pepper
onion, sliced
carrots, diced
stalks celery, sliced
sprigs of fresh herbs
large cloves garlic, unpeeled

Method:

Soak the clay pot
in cold water for 10-30 minutes before use.
Halve the lemon and place one half inside the
cavity of the bird.

Season the bird
inside and out with the salt and pepper. Slice
the remaining half of the lemon and place it in
the bottom of the brick.

Put the vegetables
on the sliced lemon. Place the chicken on the
vegetables, add the herbs and scatter the garlic
cloves over the bird.

Cover the pot and
place it in a cold oven. Set the oven to 230
oC and cook for 55 minutes per kg,
plus an extra 25 minutes. Serve the bird with
the vegetables and garlic.
