Champagne Chicken with Grapes Recipe

Ingredients:

green seedless grapes
skinless chicken breast fillets
plain flour
salt
butter
white onions, sliced
champagne
chicken stock
ground almonds
clove garlic, crushed
sweet paprika
ground turmeric
cream
chopped fresh parsley to garnish

Skinless chicken
breast fillets are lavishly coated with an elegant
champagne and cream sauce enhanced with seedless
green grapes.

Method:

Skin the grapes,
set aside.

Toss well to coat the chicken
breasts with the flour and salt lightly.

Heat the butter in
a large, nonstick frying pan over a medium heat.
Add onions and fry for 5 minutes,
or until soft.

Add the chicken
breasts and fry on both sides for 2 minutes, or
until the color changes to golden.

Add the champagne
and stock to the pan and bring to the boil.
Cover and simmer over a medium-low heat for 15
minutes or until the chicken is cooked through.

Transfer the
chicken to a warmed serving plate and keep warm.

In a small bowl,
blend the ground almonds, garlic, paprika and
turmeric smoothly with the cream. Add the almond
mixture to the pan and bring to the boil,
stirring constantly. Simmer for 3 minutes, to
thicken slightly. Stir in the grapes and heat
through.

Spoon the sauce
and grapes over the chicken. garnish with a
little parsley and serve immediately.
