Fillet of Beef with Anchovy

Ingredients:
1.5 kg piece

Anchovy butter:
100 g

beef fillet
Black pepper
sunflower oil
butter
anchovy fillets
lemon juice
finely chopped parsley
fresh parsley, chopped to garnish

Method:

Preheat the oven
to 230 oC. Sprinkle the meat with the
pepper, heat the oil in a baking dish & brown
the meat well on all sides. Place it in the oven
and roast for just 10 minutes. Remove and set
aside.

Puree the butter & anchovies in a
blender or a food processor. Scrape the puree
into a bowl and stir with lemon juice, parsley
and some pepper. Roll the mixture into a sausage
shape, wrap it in plastic wrap and refrigerate
until firm.

When meat is cold, slice through
the fillet of beef at 5 mm intervals, leaving
just enough meat on the underside to hold all
the slices together.

Cut the anchovy butter into
slices and slip one in between of meat. Wrap the
meat in the foil and refrigerate it until you
intend to cook it.

Preheat the oven to 220 oC.
Roast the meat in the foil on a baking tray for
15 minutes.

Remove the foil. Sprinkle the
fillet with chopped parsley on a serving
platter. Serve with spinach & new potatoes.
