Cheese and Bacon
Potato Gratin Recipe

fresh cream or milk
mature Cheddar or Parmesan cheese, grated
potatoes
dried thyme
dried chives
salt and black pepper
onion, thinly sliced
bacon

Method:

Preheat the oven
to 200 oC. Butter the bottom and
sides of a large gratin dish.

Beat together the
eggs, the cream or milk, and the cheese in a
large mixing bowl with a balloon whisk.

Peel the potatoes
and grate them in a food processor using the
coarsest grating disc. Add the dried thyme and
chives and season with lots of salt and pepper.
Turn the mixture over a few times to mix
everything thoroughly.

Scatter the onion
slices over the bottom of the dish and spoon the
egg and potato mixture over them, spreading it
into an even layer with a knife or spatula. Put
it on the top shelf of oven and baked for 35-40
minutes.

Check the gratin
is nicely browned, then grill or fry the bacon
until crisp and sprinkle it over the top to
serve.
