Tofu and Bamboo Shoot Soup
(Tofu Takenoko Miso-Shiru) Recipe
(serves 4)

Ingredients:
180 g/ 6 oz
100 g/ 1 cup
1 liter/ 4 cups
3 tbsp
|
tofu, cubed
bamboo shoots, cut in shreds
dashi
miso |

Method:

Place dashi and
bamboo shoots in a medium saucepan and bring to
the boil.

Boil for 1 minute,
then add the tofu.

Place miso in
large ladle and dissolve it with some of the hot
soup, stirring it with a wooden spoon. Stir the
miso into the saucepan, then add the soy sauce.

Reheat soup, and
when boiling, ladle it into 4 serving bowls.
Serve immediately.
