Bonito Stock (Dashi) Recipe

Ingredients:
10 cm / 4 in
1 liter/ 4 cups
60 ml/ 1/4 cup
80 g/ 1 cup

square piece konbu, wiped
clean
water
cold water
bonito flakes |

Method:

Cut konbu into 4
equal strips. Place in a saucepan, over medium
heat, with liter/ 4 cups water. Just before it
reaches the boil, remove and discard konbu.

Add the cold water
and bonito flakes. Bring to the boil, remove
from heat and set aside to cool.

When the bonito
flakes have sunk to the bottom, strain the
liquid; discard the flakes. Use as required.
