Chili Sherry Vinegar Recipe
(makes: about 375 ml)

Ingredients:

1/2 tsp
375 ml

 

 

fresh green chili, blanched and chopped
fresh red chili, blanched and chopped
mixed peppercorns
sherry vinegar

 

Method:

  1. Put the chili and peppercorns inside a sterilized jar. Pour in the vinegar. Seal the jar and shake well. Keep in a cool, dark place for two weeks, shaking the jar occasionally.

  2. Strain the chili-flavored vinegar through muslin or a paper coffee filter into a sterilized bottle. Seal at once with a vinegar proof top.

PREPARATION TIME:   5-10 minutes plus 2 weeks infusing                       COOKING TIME:    none
