Chili Sherry Vinegar Recipe
(makes: about 375 ml) |
Ingredients:

1/2 tsp
375 ml

fresh green chili, blanched
and chopped
fresh red chili, blanched and chopped
mixed peppercorns
sherry vinegar

Method:

Put the chili and
peppercorns inside a sterilized jar. Pour in the
vinegar. Seal the jar and shake well. Keep in a
cool, dark place for two weeks, shaking the jar
occasionally.

Strain the
chili-flavored vinegar through muslin or a paper
coffee filter into a sterilized bottle. Seal at
once with a vinegar proof top.
