Tomato and Bread Salad Recipe
This salad is a
traditional peasant dish from Tuscany which was created to use up
bread that was several days old. It is best made with sun ripened
tomatoes.
Ingredients: |
400 g/ 14 oz/ 3 1/2 cups

For the dressing:
60 ml/ 4 tbsp
30 ml/ 2 tbsp

stale white or brown bread or
rolls
large tomatoes
large red onion, or 6 spring onions
extra virgin olive oil
white wine vinegar
salt and ground black pepper

Method:

Cut the bread or
rolls into thick slices. Place in a shallow
bowl, and soak with cold water. Leave for at
least 30 minutes.

Cut the tomatoes
into chunks. Place in a serving bowl. Finely
slice the onion or spring onions, and add them.
Squeeze the water out of the bread and add the
bread to the onions and tomatoes.

Make a dressing
with the oil and vinegar. Season with salt and
black pepper. Pour it over the salad and mix
well. Allow to stand in a cool place for at
least 2 hours before serving, garnished with the
basil.
