For a
sophisticated start to an elaborate meal, try this simple salad of
honey-rich pears, fresh Parmesan and aromatic leaves of rocket.
Enjoy it with a young Beaujolais or chilled Lambrusco wine.
Ingredients:

10 ml/ 2 tsp
45 ml/ 3 tbsp
115 g/ 4 oz
75 g/ 3 oz
ripe pears, Williams or Packhams
lemon juice
hazelnut or walnut oil
rocket, washed and dried
Parmesan cheese, shaved
ground black pepper
open-textured bread, to serve
Method:
Peel and core the
pears and slice thickly lengthways. moisten the
flesh with lemon juice to keep it white.
Combine the nut
oil with the pears. Add the rocket leaves and
toss.
Turn the salad out
on to four small plates and top with shavings of
Parmesan cheese. Season with freshly ground
black pepper and serve with the bread.
