Mediterranean Garlic Toast Recipe
Mediterranean
garlic toast, or bruschetta, is served as a starter in Spain, Greece
and Italy. With a topping of plum tomatoes, mozzarella and
pepperoni, it also makes a filling snack.

Ingredients:
150 g/ 5 oz

mozzarella, drained
plum tomatoes
French loaf
garlic clove, halved
olive oil, plus extra for brushing
pepperoni slices
fresh torn basil, or 5 ml/ 1 tsp dried basil
salt and ground black pepper
fresh basil sprigs, to garnish |

Method:

Preheat the grill
to a medium heat. Cut the mozzarella into twelve
slices and each tomato into six slices. Cut the
French loaf in half and slice each half
horizontally.

Place the bread
under the grill, cut side up, and toast lightly.
While the bread is warm, rub the cut sides of
the garlic clove on the toasted sides of the
bread, then drizzle over about 7.5 ml/ 1/2 tbsp
of the oil.

Top each toast
with three slices of pepperoni, three slices of
mozzarella and three slices of tomato. Brush the
tops with a little more olive oil, season well,
and sprinkle over the basil.

Return the toasts
to the grill and toast for 2-3 minutes, until
the cheese has melted. Remove and serve hot,
garnished with sprigs of fresh basil.
