Grilled Sardines Recipe
Fresh sardines
are flavorful and firm-fleshed, and quite different in taste and
consistency from those canned in oil. They are excellent plainly
grilled and served with lemon.
Ingredients: |
1 kg/ 2 lb
45 ml/ 3 tbsp

fresh sardines, gutted & with
heads removed
olive oil, for brushing
salt and ground black pepper
chopped fresh parsley &
lemon wedges, to garnish |

Method:

Preheat the grill.
Rinse the sardines inside and out with cold
running water. Pat dry thoroughly with kitchen
paper.

Brush the sardines
lightly with olive oil and sprinkle generously
with salt and pepper. Place the sardines in a
single layer on the grill pan. Grill for 3-4
minutes.

Turn, and cook for
3-4 minutes more, or until the skins begin to
brown. Serve immediately, garnished with the
chopped parsley and lemon wedges.
