Coffee Dessert Recipe
Tiramisu mean
"pick me up", and this rich egg and coffee dessert does just that!
If you prefer, top with a sprinkling of grated chocolate instead of
cocoa powder.
Ingredients: |
500 g/ 1 1/4 lb

90 g/ 3 1/2 oz/ 1/2 cup
120 ml/ 4 fl oz/ 1/2 cup
60 ml/ 4 tbsp

mascarpone cheese
eggs, separated, at room temperature
caster sugar
pinch of salt
savoyard or sponge biscuits, to line dishes
strong espresso coffee
brandy or rum (optional)
unsweetened cocoa powder, to sprinkle |

Method:

Beat the
mascarpone in a small bowl until soft. In a
separate bowl beat the egg yolks with the sugar
(reserving 15 ml/ 1 tbsp) until the mixture is
pale yellow and fluffy. Gradually beat in the
softened mascarpone.

Using an electric
beater or wire whisk, beat the egg whites with
the salt until they form stiff peaks. Fold the
egg whites into the mascarpone mixture.

Line one large or
several individual dishes with a layer of
biscuits. Pour the coffee into a measuring jug,
add the reserved sugar, and stir in the brandy
or rum, if using.

Sprinkle the
coffee over the biscuits. They should be moist
but not saturated. Cover with half the egg
mixture. Make another layer of biscuits
moistened with coffee, and cover with the
remaining egg mixture. Sprinkle with cocoa
powder. Cover, and chill in the fridge for at
least 1 hour, preferably more, before serving.
