Chocolate Amaretti Peaches Recipe

Quick and easy to prepare, this delicious dessert can also be made with fresh nectarines, a variety of peach with a smooth skin like a plum.

Ingredients:

115 g/ 4 oz
50 g/ 2 oz

15 ml/ 1 tbsp
1.5 ml/ 1/4 tsp

150 ml/ 1/4 pint/ 2/3 cup
15 ml/ 1 tbsp

amaretti biscuits, crushed
plain chocolate, chopped
grated rind of 1/2 orange
clear honey
ground cinnamon
egg white, lightly beaten
firm ripe peaches
white wine
caster sugar
whipped cream, to serve

Method:

  1. Preheat the oven to 190 oC/ 375 oF/ Gas 5. Mix together the crushed amaretti biscuits, chocolate, orange rind, honey and cinnamon in a bowl. Add the beaten egg white and stir to bind the mixture.

  2. Halve and stone the peaches and fill the cavities with the amaretti mixture, mounding it up slightly.

  3. Arrange the stuffed peaches in a lightly buttered, shallow ovenproof dish which will just hold them comfortably. Pour the white wine into a measuring jug, then stir in the sugar.

  4. Pour the wine mixture around the peaches. Bake for 30-40 minutes, until the peaches are tender. Spoon a little of the cooking juices over the peaches and serve with whipped cream.
