Chicken with Olives Recipe

This tasty dish makes a good light main course and can be put together quickly for unexpected guests. It is equally good with turkey pieces.

Ingredients:

olives oil
garlic clove, crushed
dried chili, lightly crushed
boneless chicken breast, cut into 5 mm/1/4in slices
dry white wine
tomatoes, peeled and seeded, cut into thin strips
black olives
fresh basil leaves, torn into pieces, & basil sprigs, to garnish
salt & ground black pepper

Method:

  1. Heat 60 ml/ 4 tbsp of the olive oil in a large frying pan. Add the garlic and dried chili, and cook over a low heat until the garlic is golden.

  2. Raise the heat to moderate. Place the chicken in the pan, and brown all over for about 2 minutes. Season.

  3. Transfer the chicken to a heated dish. Remove the garlic and chili and discard. Add the wine, tomato strips and olives, then cook over a moderate heat for 3-4 minutes. Using a wooden spoon, scrape up any meat residue from the base of the pan.

  4. Return the chicken to the pan. sprinkle with the basil leaves. Heat for about 30 seconds, to make sure it is warmed through, then serve, garnished with basil sprigs.
