Calzone
Recipe
Calzone are
simply pizzas with the topping on the inside. This vegetable filling
is delicious but you could change the ingredients if you like.
Ingredients: |
For the
pizza dough:
450 g/ 1 lb/ 4 cup
1 sachet
350 ml/ 1 1/2 cups
For the
filling:
5 ml/ 1 tsp

150 g/ 5 oz
15 ml/ 1 tbsp

plain flour
easy-blend dried yeast
warm water
olive oil
red onion, thinly sliced
courgettes, sliced
large tomatoes, diced
mozzarella, diced
chopped fresh oregano
skimmed milk, to glaze
salt and ground black pepper
fresh oregano sprigs, to garnish

Method:

To make the dough,
sift the flour and a pinch of salt into a bowl
and stir in the yeast. Stir in just enough warm
water to mix to a soft but not sticky dough.

Knead for 5
minutes until smooth. Cover with clear film or a
dish towel and leave in a warm place for about 1
hour, or until doubled in size.

To make the
filling: Heat the oil and sauté the onion and
courgettes for 3-4 minutes. Remove from the heat
and add the tomatoes, mozzarella and oregano and
season to taste with salt and pepper. Preheat
the oven to 220 oC/ 425 oF/
Gas 7 for at least 20 minutes.

Knead the dough
lightly and divide into four. Roll out each
piece on a lightly floured surface to a 20cm/8in
round. Place a quarter of the filling on one
half of each round. Brush edges with milk. Fold
over the filling. Press the edges firmly. Brush
with milk. Bake for 15-20 minutes until golden.
Garnish with oregano sprigs.
