Bruschetta with tomato Recipe

A simple version of bruschetta, this tomato-topped toast may be served as a starter, a snack, or as an accompaniment to a meal.

Ingredients:

3-4

8 slices
2-3
90 ml/ 6 tbsp
tomatoes, chopped
a few fresh basil leaves, torn into pieces
crusty white bread
garlic cloves, halved
extra virgin olive oil
salt and ground black pepper

Method:

  1. Place the chopped tomatoes with their juice in a small bowl. Season with salt and pepper, and stir in the basil. Allow to stand for 10 minutes.

  2. Toast or grill the bread until it is crisp on both sides. Rub one side of each piece of toast with the cut sides of the garlic.

  3. Arrange the toasts on a serving platter, garlic side up, and sprinkle with the olive oil. Spoon on the chopped tomatoes, and serve immediately.
