Baked fennel Recipe
Fennel is
widely eaten all over Italy, both in its raw and cooked form. It is
delicious married with the sharpness of Parmesan cheese in this
dish.
Ingredients: |
1 kg/ 2 1/4 lb
50 g/ 2 oz/ 4 tbsp
40 g/ 1 1/2 oz/ 1/3 cup

fennel bulbs, washed and
halved
butter
freshly grated
parmesan cheese |

Method:

Preheat the oven
to 200 oC/ 400 oF/ Gas 6.
Cook the fennel in a large pan of boiling water
until soft but not mushy. Drain.

Cut the fennel
bulbs lengthways into four or six pieces. Place
them in a buttered baking dish.

Dot with butter,
then sprinkle with the grated Parmesan. Bake for
20 minutes until golden brown. Serve at once.
