Sole Filets in Cream Sauce Recipe
(serves 4 )

 

Ingredients:

1/4 cup/ 50 ml
1

1/2 tsp/ 2 ml
1/4 cup/ 50 ml

 

large sole filets
dry white wine
red pepper, cut in strips
green pepper, cut in strips
curry powder
heavy cream
juice 1 lemon
salt and pepper

Method:

  1. Place filets in large buttered frying pan. Season with salt and pepper.

  2. Add wine, lime juice and peppers. Cover with sheet of waxed paper. Bring to boil over medium heat.

  3. As soon as liquid starts to boil, remove pan from heat. Let stand 2 minutes.

  4. Remove fish and vegetables from pan; keep hot.

  5. Return pan to stove over high heat. Incorporate curry powder into liquid and cook 3 minutes.

  6. Stir in heavy cream and continue cooking 3 minutes over high heat.

  7. Pour sauce over filets and serve.
