Ingredients:

4 tbsp/ 60 ml
1 tsp/ 5 ml
2 tbsp/ 30 ml
1 lb/ 500 g
2 tbsp/ 30 ml

small celeriac, peeled and cut
in fine julienne
mayonnaise
Dijon mustard
sour cream
cooked shrimp, peeled, deveined and cut in two
finely chopped lemon rind
small green pepper, cut in julienne
lemon juice
salt, pepper, paprika |

Method:

Cook celeriac 3
minutes in boiling, salted water with lemon
juice. Place saucepan under cold water to stop
cooking process, then drain celeriac well.
Squeeze out excess liquid from celeriac and blot
with paper towels.

Place mayonnaise
in bowl. Add mustard and sour cream. Mix and add
salt, pepper, paprika and lemon juice to taste.
Mix again.

Place celeriac,
shrimp, lemon rind and green pepper in bowl. Add
sauce and mix well. Correct seasoning and serve.
